'WHAT THE FUDGE?

Ingredients:

  • 60 grams of butter
  • 1 tin sweetened condensed milk
  • 2 blocks cooking chocolate (white or dark. One of each or stick to one. This is a choice of taste)
  • What ever you want to add chopped up small (see wicked variations below)
Procedure:
  • temper chocolate in a bowl over hot water.
  • add butter
  • add condensed milk
  • Line a slice tray or cake pan in a pinch
  • Add in half of the mixture
  • Add in what ever you want to add
  • Add in the second half of the mixture.
  • Pop in Fridge over night or the freezer for a few hours if you absolutely cannot wait :) Enjoy
Wicked Variation:
  • Mars bar fudge - i add a bag of fun sized bars chopped up per batch or 7 full sized bars
  • Snickers fudge - same as Mars bar
  • Cherry Ripe fudge - About 9 cherry ripe bars. TIP: Make it with dark choc or at least hald & half the cooking choc
  • Layered fudge - Dark choc, White choc, Milk choc.
WARNING: White choc fudge on its own is WAY TO SWEET. - Your insides will thank me :)

Mum's Banana Cake & The Daughter's Spin

Makes 1 Cake or about 8 muffins
Ingregients:

  • 2/3 cup of sugar
  • 1 egg
  • 1 tablespoon of milk
  • 60 grams Butter
  • 3 Bananas (mashed)
  • 1 cup self raising flour
Procedure:
  • Cream the butter and sugar
  • Add egg slowly
  • Stir in mashed banana
  • Gradually add in milk and flour
- Bake in moderate oven 180℃ for 45 mins

The Daughter's Spin:


Instead of 3 Bananas, try:

  • 1 and a half mashed bananas
  • 1 cup of your choice of berries (blueberries & raspberries work well. Frozen berries work well also.)

  • 1 and a half mashed bananas
  • 100g roughly chopped chocolate lightly coat in flour before adding to the batter to ensure they don't sink

Changes to batter:

  • Add ground chai mix, or alternatively cinnamon and nutmeg
  • Instead of normal sugar, replace with Vanilla sugar
  • Add vanilla extract!

Choc Chip Cookie Dough Slice


Ingregients:

  • 225 grams Sofened butter
  • 150 grams brown sugar
  • 75 grams white sugar
  • 1 teaspoon Bi-carb soda
  • 2 large eggs
  • 2 tablespoons vanilla extract
  • 1 teaspoon salt
  • 200 grams choc chips (set aside 50 grams for topping)
  • 180 grams chopped rough block chocolate
  • Pre-heat oven for 180℃
Procedure:
  • whisk butter and eggs well
  • add eggs, vanilla and mix
  • add flour, bi-carb and salt and mix
  • fold chocolate into the mix
  • scoop mixture into lined baking tin and smooth out evenly
  • add 50 grams choc chips to the top
  • Bake for 24 mins and let fully cool

tips

  • Don't over mix batter, only mix until 99% of flour is no longer dry. Then Stop!
  • Can add curly wirly for touch of caramel
  • Sprinkle with salt
  • When serving, heat up slice in the oven to get all melty - 5 mins

Girl Dinner Pizza Dough

It works, trust me bro.
Ingregients:

  • 160 grams greek yogurt or any plain yogurt will do
  • 160 grams self raising flower
Procedure:
  • Mix together as a dough
  • Dough is enough for 1 large or 2 small pizzas
  • Put pan in oven to preheat with oven 250℃
  • Place dough on preheated pan and swipe a little oil over it
  • bake for 3 mins
  • Take out of the oven and Top your pizza with yum stuff, yes, Pineapple is fine and i WILL fight you on that!
  • Bake for 5 mins

Mum's Apple Slice

Ingregients:

  • 1 cheap paket cake mix (vanilla/butter cake mix)
  • 1 cup coconut (disecated)
  • 125 grams butter
  • 800 grams canned apples
  • small tub of sour cream (200 grams)
  • Caster sugar and cinnamon *for garnish*
Procedure:
  • Mix cake mix, coconut & butter
  • Press into slice tray/pan
  • Bake in oven 20 mins 180℃
  • Spread apples over top of base
  • Place sour cream over the apples and spread evenly
  • Sprinkle with cinnamon and sugar
  • Bake to 10 mins

Serve

  • Hot w/ icecream or cream
  • Leave to set in fridge overnight
